অকাল বার্ধক্য ও রোগ প্রতিরোধ By (author)দীপায়ন তূর্য, মিশু দাস খাওয়ার জন্য বাঁচা, নাকি বাঁচার জন্য খাওয়া’ কথাটার সঙ্গে আমরা সবাই কম-বেশি পরিচিত। উত্তরটা জানা সত্ত্বেও আমরা অনেক সময় খাওয়ার ব্যাপারে কোনো রকম ভাবনাচিন্তা না করেই খাবার খেয়ে থাকি। আবার অনেক সময় কোন খাবারটা ভালো আর কোন খাবারটা মন্দ, তা জানার পরও আমরা প্রচলিত রীতির বাইরে গিয়ে খাওয়ার ব্যাপারে নতুন করে ভাবতে চাই না। একুশ শতকের শুরুর দিকে পৃথিবীতে প্রতিদিন প্রায় দেড় লাখ মানুষ কোনো না কোনো কারণে মারা যাচ্ছে। আপাতদৃষ্টিতে মৃত্যু অবধারিত জেনেও কিন্তু হোমো সেপিয়েন্সরা বসে নেই। কেমন করে আয়ু বাড়ানো যায় আর বয়স হওয়াকে বিপরীতে নেওয়া যায়, সেই পদ্ধতি বের করার জন্য গবেষকরা কাজ করে চলেছেন। এই গবেষণা কার্যক্রমের নাম ‘আয়ু বৃদ্ধিকরণ’ (Life extension), যেখানে চেষ্টা করা হচ্ছে এমন সব প্রযুক্তি বের করতে যাতে করে ১২৫ বছরের সর্বোচ্চ জীবনসীমার চেয়েও বেশি দিন বাঁচা সম্ভব হয়। শুধু ভুল খাবার নির্বাচনের ফলেই নানা রকম রোগ শরীরে বাসা বাঁধতে পারে। শুরু হয়ে যেতে পারে অল্প বয়সে বুড়িয়ে যাওয়া। এই বইয়ে চেষ্টা করা হয়েছে খাবার এবং জীবনাচারের ব্যাপারে সঠিক বৈজ্ঞানিক তথ্য উপস্থাপন করতে, যাতে পাঠক বইটি পড়ে নিজেই বুঝতে পারেন কোন খাবারগুলো এবং কেমন জীবনাচার তার সুস্থ থাকার জন্য বেশি কার্যকর।
